
Ok the picture doesn’t look like much (I’m actually trying to teach myself not to be a perfectionist about my pictures but just take some and get on with life) but hear me out:
Ingredients
- 500g zucchini (finely grated)
- 2 eggs
- 2 spring onions (or 1 small yellow or red onion I guess)
- 1 clove of garlic
- 60-90g of flour (depending on how much water you manage to squeeze out of your zucchini – read on)
- 1 tsp salt
- a little bit of pepper
- oil for frying
Optional: cheese, more spices, go wild!
Instructions
- Grate the zucchini! I do this in a food processor (because, so fast!) & squeeze out as much liquid as possible.
- Chop the onions finely and mix it with the zucchini in a large bowl.
- Add eggs, flour, salt, pepper & any “optionals”. Mix into a batter. If it’s too loose, add more flour.
- Heat oil in a frying pan over medium heat. Scoop out small portions of the batter and flatten slightly.
- Fry on each side until golden brown and cooked through.
- Serve warm, with a dollop of yogurt, tzatziki, or a fresh salad.
Pro tip: Preheat your oven to 100°C (about 210°F) and move your fritters from the frying pan to a lined oven tray as you progress through the batter to keep them warm until you’re ready to serve/eat.
